Lemon Garlic Pork Loin

Lemon garlic pork loin over spinach egg noodles dressed in a roasted tomato feta sauce topped with fresh sautéed basil 🌿

INGREDIENTS:
1 lemon garlic pre marinated pork loin
1 12oz bag of spinach egg noodles
2 cups cherry tomatoes
8 oz block of feta cheese
2 tbsp freshly minced garlic
1 cup heavy cream
(sub: low-fat skim or dairy free milk)
Bundle of fresh basil
3 tsp olive oil
DIRECTIONS:
Place pork on a flat baking pan in oven at 350 degrees for about an hour or until cooked through 145 F while baking prepare your sauce and pasta.
In sauté pan, heat your olive oil, add garlic cook until aromatic add your tomatoes, roast until soft. Smash garlic and tomatoes until well blended. Remove from pan and set aside. Add feta to pan (do not rinse pan) slowly pour in your heavy cream (or sub) until cream, add tomato and garlic bag to pan stir together and set to simmer.
Boil pasta to your liking (we enjoy ours Al dente) strain do not rinse. Add sauce to pot blend well.
Sauté basil (2-3 leaves per serving)
Once pork is finished cut horizontally
serve on top of spinach noodles and finish off with basil! (Salt and pepper to taste)
